Susan Branch

Have I told you how much I love Susan Branch? I know it's a little passe now, but the old-fashioned quirkiness is part of her charm. Somehow, one of her earlier books, Vineyard Seasons, was missing from my library. I remedied that when I spied it in the used book store for only $10 last week.

Her books are as much about reading, thinking, and creating as they are about cooking.

So far, I've made the Rosemary Orzo Salad and the Velvet Chicken Salad for a picnic. And because we were given lots of fresh garden zucchini, I want to make this too:

Zucchini with Apple
1/2 c. walnut pieces
1/4 c. butter
2 small zucchini, grated
1 green apple, peeled and grated
fresh lemon juice
salt & pepper

Saute walnuts in butter, set aside. Put zucchini in the same pan, saute for 1 minute. Remove from heat, add walnuts, apple, lemon juice, salt & pepper. Stir & serve.

Sounds good, doesn't it?

ugh (she snorts derisively), Susan Branch will never be passé! :^)

I'm still diggin' her fabrics line - those itty bitty prints in cottage colors and motifs...LOVE!

And that zucchini and apple sounds yummy!
