I’ve been pantry inventing again, which is what happens to you if you are alone in the house all day without normal food. In the frig I had 3 carrots that were not too withered, so I shredded them. Add the salad dressing that I previously published
here. I had made it with lemon juice and I added a little honey. Now, what’s in the pantry….walnuts, dried cranberries, currants, and golden raisins (score!), and coconut (why not?). Canned pineapple would be perfect, but alas, we don’t have any. There are canned mandarins. What do you think? I’ll leave them out. So there you go, a healthy salad in 30 seconds.
